You probably haven’t spared cauliflower a thought before, seeing as it’s pretty much a crunchy albino broccoli. But before you pass it over at the farmers market this week, read on. We have a few healthy and innovative recipes incorporating cauliflower that might be for you.
What’s so special about cauliflower?
Like many vegetables, cauliflower is low in calories and rich in minerals. What makes it unique is that it’s a versatile substitute ingredient. If you’re vegetarian, you can swap it in for meat in a number of different recipes; it also doubles as the main ingredient for gluten-free dough recipes, like cauliflower pizza crust.
What did you cook with it?
I decided on cauliflower cheese sauce, which I’ve always been curious about. This recipe incorporates chicken broth, but you could easily use veggie broth instead. I do recommend you find a blender or food processor — I mashed the cooked cauliflower by hand because I’m low on appliances, but I couldn’t achieve the creamy texture described by the recipe. Fortunately, the parmesan garlic cauliflower I made as a side dish turned out perfectly.
What else can you do with it?
Buffalo cauliflower bites with ranch sauce make an easy vegetarian party dish — they’re crunchier than chicken would be but still taste amazing. You can also substitute cauliflower for meat in cauliflower kung pao, or mash it for the dough base in these and these cheesy cauliflower bites. The possibilities are endless!
