Ingredients:
- 4 to 4 1/2 cups all-purpose flour
- 2 packages active dry yeast
- 1 1/2 cups warm water
- 3 tablespoons sugar
- 1 tablespoon salt
- 1 tablespoon sugar
Combine 1 1/2 cups of flour and yeast in a large mixing bowl. Mix water, 3 tablespoons sugar, and salt; pour over flour mixture. Beat contents of bowl on slow setting of electric mixer for 30 seconds. With a large spoon, stir in as much flour as you can mix.
Turn out onto a lightly floured board and knead in enough flour to make dough moderately stiff, smooth and elastic (about 8 minutes). Cover with a clean towel and let dough sit for 10 minutes.
Cut dough into 12 equal portions and mold each portion into a smooth ball. Punch a 1 1/2 inch hole in the center of each ball. Place on a greased baking sheet. Cover sheet and let rise for 20 minutes. Broil bagels 5 inches from the heat for 4 minutes, turning once. Stop before top gets brown. Boil 1 gallon of water with 1 tablespoon of sugar and then reduce heat. You can cook up to 4 bagels simultaneously, turning once. Drain water. Place on baking sheet and bake at 375���� for no longer than 30 minutes. Makes about a dozen bagels.
